Braised Radish and Brisket
蘿蔔炆牛腩

Ingredients/材料:

|
Beef brisket/牛腩
Radish/白蘿蔔
Ginger/薑片
|
1.5 lbs/ 1.5 磅
1 lb/1 磅
3 slices/ 3 片
|
Sauce & Spices/醬料:
|
|
Light Soy Sauce/生抽
Dark Soy Sauce/老抽
Oyster Sauce/蠔油
Chu Hou Paste/柱候醬
Sugar/糖
Star Anise/八角
Dried Tangerine Peel/果皮
Water/水
|
1 cup/1 杯
Half cup/半杯
3 Tbs/3 湯匙
3 Tbs/3 湯匙
¾ cup/ ¾ 杯

Around 5 cups

Methods/做法:
|

|
|
1. Wash the brisket then cut the it into chunks. (Do not cut into very
small chunks as it shrinks after being cooked)
|
1. 將牛腩洗淨, 切塊. (不用切太小, 因出水後會縮小)
|
|
|
|
2. Boil a big pot of water with a few slices of ginger.
|
2. 加幾片薑煮一大鍋開水.
|
|
|
|
3. Put all the brisket chunks into the boiling water for 3 -4 minutes.
|
3. 水滾後放入牛腩煮3 至4 分鐘
|
|
|
|
4. Rinse the brisket under cold water after taken out from the boiling
water.
|
4. 將牛腩用凍水沖(過冷河)
|
|
|
|
5. Rinse the radish before peeling. (Tips: How to choose radish)
|
|
|
6. Peel the radish, cut off the roots we don’t need.
|
6. 將蘿蔔去皮, 頭切掉.
|
|
|
|
7. Cut it into chunks (Do not cut it too small)
|
7. 蘿蔔切塊備用
|
|
|
|
8. Mix sugar, dark soy sauce, light soy sauce, oyster sauce, chu hou
sauce in a bowl.
|
8. 先將糖, 老抽, 生抽, 蠔油, 柱候醬混好.
|
|
|
|
9. Heat cooking oil with garlic, then add in the brisket to stir about
30 seconds.
|
9. 大火下油爆香蒜頭後, 下牛腩略炒.
|
|
|
|
10. Add the radish in and continue to stir.
|
10. 再加入蘿蔔略炒.
|
|
|
|
11. Stir in the mixed sauce, star anise, dried tangerine peel and water.
(Make sure the water are almost cover all the ingredients) Cook until boil.
|
11. 加入混好醬料, 加水, 八角及果皮略翻一下等水煮滾. (水要蓋及所有材料)
|
|
|
|
12. Pour all into a slow cooker. (You can cook on cook top with clay pot in low heat if you don't have slow cooker)
|
12. 將所有材料轉至slow cooker. (如没有slow cooker, 可轉用明火細火煲)
|

|
|
13. Program to cook 3 hours with low temperature.
